A mixture of flours meant for making tempura – frying vegetables, seafood and meat coated with batter – as per Japanese culinary tradition. The mixture of flours is marketed in a normal version as well as in version seasoned with pepper and garlic or with piquant and hot seasoning. Good tempura should be crispy and not oily, which is why it is very important to use the proper mixture of flours. Tempura batter does not contain eggs, and is based on a mixture of flours with very cold water.
