a Chinese condiment based on black soybeans (a darker variation of soybean, different from the lighter one) that have been salted, fermented and dried. At the end of the process the soybeans are ground and mixed with chili and vegetable oil. Chili bean paste is used as a dip served with other dishes, or as flavoring for soups and cooked dishes. The paste-sauce’s color is red-black and it boasts medium levels of saltiness and hotness.
