Tom yum is a famous soup belonging to Thai cuisine, characterized by a sour and spicy flavor (in Thai, “yum” refers to a sour and spicy flavor profile). Tom yum soup contains whole pieces of roots and herbs – kaffir lime leaves, lemongrass stalks, fresh pieces of galangal – and other ingredients, such as lime juice, chili peppers and shallot onions. Due to the difficulty of acquiring fresh kaffir lime leaves and galangal roots, sauces were made of extracts of tom yum’s essential flavoring ingredients. Tom yum sauce makes it possible to make tom yum far more simply, by adding it to soup stock, fish sauce, fresh lime juice and herbs. Tom yum sauce can also be used as flavoring for stir-fried dishes containing vegetables and a protein-based ingredient, such as meat, fish or tofu.
