Frijoles Refritos (“Well braised beans”: direct translation from Spanish) is a basic food that forms an important component in the Mexican kitchen and the Tex-Mex kitchen of south-west of United States (Although there are differences between the different versions of each kitchen). This is a beans that cooked in water, smashed into a thick mash with a little cooking water and after that fried in oil, sometimes with onion, garlic and other spices. The fried mash is served with other foods as an addition or that smeared as a basis into Tacos, Burritos or Quesadillas. It is conventional in the Tex-Mex kitchen to use pinto beans (Kind of light brown pinto beans) and the result is a light brown mash with mild flavor that suitable for various Tex-Mex foods.
