A variety of rice with high contents of starch that make its grains stick. Sticky rice is the most common variety of rice in Northeast Thailand and in Thailand. Sticky rice cannot be eaten “one at a time” and should be eaten by hand, grabbing a small lump each time and shaping it into a ball by the hand. The ball is then dipped in sauces and is eaten along with other Thai dishes – mostly in the North and Northeast regions of Thailand (Isan). Sticky rice is not suitable for making sushi and has to be cooked differently from regular rice (long soak followed by steaming).
