Chili Garlic Sauce

A thick sauce made of red chili flakes, garlic, sugar and vinegar. Despite its containing chili, the sauce is very mildly hot and its main flavor is a strong sweetness. It originates in Thai cuisine, where it is used as dipping sauce for deep-fried dishes (such as egg roll or batter-fried seafood), much like ketchup’s use in the West. The sauce can also be used as an ingredient in marinades and sauces requiring sweetness.
