Square noodles made of rice flour. They are called guay chap in Thailand. When dry, their shape is square or triangular, but once cooked they roll up into cylinders. These noodles work well in soups or as a base for stir-fried dishes, and due to their shape (and their ability to absorb sauce) they work especially well in dishes featuring thick sauces
