A species of edible seaweed that is common in Japanese cuisine. After being dried, hijiki seaweed looks like thin black strips. To use it, hijiki has to be soaked in water, filtered and then cooked. After being soaked, hijiki maintains its black color. In Japanese cuisine, it is common to cook hijiki seaweeds in soy sauce and sugar and then add them to various foods, such as cooked vegetables, soups, rice and along with cucumbers in a cold salad. Hijiki seaweed is rich in minerals and nutritional fibers.
