Flour made by grinding rice to a powder. Its color is white, it contains no gluten and is therefore suitable for those sensitive to gluten. Rice flour is used in making desserts, in thickening sauces and in making steamed doughs and various pastries. There are two varieties of rice flour – normal and sticky. Sticky rice flour (also called “sweet rice flour” in Japan) is made of sticky rice, and contains more starch than normal rice flour, making it highly suitable for thickening liquids.
