Bamboo shoots are the edible stems of a specific species of bamboo. Bamboo shoots are eaten as a vegetable all across East Asia and are popular in many culinary cultures in the region. The edible stems can be canned, and unlike other vegetables their pleasant flavor is preserved well in the canning process. Their color is yellowy and their flavor is slightly bitter. Bamboo shoots are marketed whole – or cut into slices or thin strips – and they work well in Thai curry dishes, in Chinese, Korean or Japanese stir-fried dishes and in warm or cold salads.
