An alcoholic beverage made by fermenting rice with special yeasts. The history of sake, also known as “Japanese rice wine”, is long and complicated, with production methods changing constantly over the years. There are dozens of sake varieties, differing in production methods, in the type of rice used and in the level of grain polishing. Sake is a very important ingredient in Japanese cuisine, and serves as a base for sauces and marinades.
