Katsuoboshi is the Japanese name for bonito fish (a species of tuna) that has been cooked, dried, smoked and fermented. Fillets of the fish go through the complicated process, yielding in a very hard slice of dried fish. The slice is then cut into this flakes, traditionally by use of a plane. Bonito flakes are used, along with kombu seaweed, in making dashi stock. In Japanese cuisine, bonito flakes are also used to fill rice balls, as ingredients in cooked dishes or as an ingredient sprinkled on various noodle dishes.
