Coconut liquid, also known as coconut milk or coconut cream (depending on percentage of fat), is created by squeezing the coconut’s “meat”. Coconut milk is used for cooking in Southeast Asian and in India and its neighbors – especially in curry dishes, soups and desserts. Coconut milk comes with varying fat contents that are suitable for varied dishes. Use of coconut milk is somewhat similar to the use of sweet cream in Western cooking. Like sweet cream, coconut milk can also break after being boiled too long. It comes canned or in cardboard packaging (with no gluten and no added stabilizers or preservatives).
