Tom yum is a famous soup belonging to Thai cuisine, characterized by a sour and spicy taste (in Thai, “yum” refers to a sour and spicy flavor profile). Tom yum soup contains whole pieces of roots and herbs – kaffir lime leaves, lemongrass stalks, fresh pieces of galangal – and other ingredients, such as lime juice, chili peppers and shallot onions. Due to the difficulty of acquiring fresh kaffir lime leaves and galangal roots outside of Thailand and Asia, pastes were made of extracts of tom yum’s essential flavoring ingredients. Tom yum paste can be used as a base for dishes aiming for tom yum soup’s flavor, or as a base for making thick tom yum soup.
