Thin dried mushrooms resembling a leaf with one side colored black and one side colored greyish-brown. Black fungus has become a common ingredient in East Asian cuisine, mostly for its chewy texture and less for its neutral flavor. To use black fungus as an ingredient it needs to be soaked in warm water for several minutes and then cut into thin strips. The mushrooms remain crispy after being soaked, and are used in stir-fried dishes, in stuffing for egg rolls and as decoration for additional dishes.
