dashi is a basic stock in Japanese cuisine, based on kombu seaweeds and bonito flakes cooked together. As an alternative for the traditional method, “dashi no moto” was created in Japan, a dried dashi powder. Dried dashi powder, which is in fact dashi dried in a factory, is marketed as small grey colored flakes. The flakes readily dissolve in warm water, and even in cold water, making it possible to quickly make a variety of Japanese soups and sauces which require the use of dashi stock.
