Sweet and sour sauce, along with soy sauce, has come to be known as one of Chinese cuisine’s more renowned symbols in the west. It was originally used as flavoring for dishes like “sweet and sour pork” or as dipping sauce for fried dishes. Despite this sauce’s having no real importance in original Chinese cuisine, it has become extremely popular in the West. In China this sauce comes in many forms, but the West has grown accustomed to the most familiar version – the red sauce with mild thickness and a smooth texture, with a simple sweet and sour flavor, based on vinegar, sugar and tomato pulp or ketchup (without much additional flavoring).
